Summary: Bake Perfect Cakes
Comment: Chicago Metallic Commericial bakeware is excellent. These 8-inch round cake pans are very heavyweight and give even baking results. I rub a bit of vegetable shortening on these pans and then line the bottom with a circle of waxed paper. One can dust some flour over the shortening, too. For an 8-inch layer cake, I like to divide the cake batter between three 8-inch round cake pans. Make sure they are staggered on the oven racks for the best baking results.
