Summary: Knife Broke
Comment: After owning this for 18 months, this knife broke in two pieces about one inch past the handle. It was the blade that actually broke. What a shock when all I was doing was separating a preseparted cheesecake that was frozen and had paper between the pieces. Scary and True...

Summary: Best Darn Steak Knife Ever
Comment: I admit it freely -- I'm a knife snob.Before I buy a knife, I have to hold it and fiddle with it to make sure it's properly balanced. I have to see that the bolster (the flared bit between the blade and the handle) is big enough to act as a brake, but not so large as to be a nuisance. I have to check the pamphlet to see that it's made from a good quality stainless steel.
This Henckles Pro-S Steak Knife passes all those tests, plus two others you can only check over time: Does the handle stand up to repeated use, and does the blade really hold it's edge?
