Customer Rating:      Summary: Cutting perfection Comment: This 8" chef's knife is one of the finest on the market. The grip is well contoured and very comfortable in the hand. The blade is razor sharp and thanks to a special process of ice-hardening it should remain so for quite some time. It's also possible to buy the J.A. Henckels Knives 10" Sharpening Steel 32565 260 to help retain the edge almost indefinitely.
The balance is superb and the curved blade is perfect for rocking back and forth as you slice vegetables. This is a fairly heavy knife, however, and for some tasks you might want a smaller, lighter knife. That's not really a negative since any kitchen should have a good variety of several knives to choose from.
There are many knives available for a lot less money than the Twin Cuisine series. Unfortunately, cheap knives will never take and hold an edge like this one will. Try this knife just once and you'll be hooked on Twin Cuisine for good.
Customer Rating:      Summary: Envy of the staff Comment: This knife has become the envy of the entire kitchen staff. I work in fine dining and this knife does it all. It keeps a shaving sharp edge. Be sure to pick up a Henckels steel and keep it that way. The balance is fantastic and the handle is the best design I have ever used. And it is by far the most comfortable. You'll be looking for things to cut with this knife. Next on my list is the serrated utility knife. You won't regret this purchase.
Customer Rating:      Summary: great for tall women Comment: I am 5'10", with hands to match. Knives with the traditional handle are just too small and my hands cramp up if I have to use them for a while. The handles on these are thick and solid and ergonomically curved. Great for a woman with larger hands or your average guy. Wouldn't recommend them for a small woman because of the handle size and because they are a heavier knife overall. My only negative with these knives is that they don't have an ID on the end of the handle the way another company (is it Wustof?) does, which makes it easy to find the knife you want without pulling them out to check.
